Protein Yogurt Parfait Pops

Ingredients

  • 2 cups Greek yogurt
  • 1/4 cup vanilla protein powder
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup mixed berries (fresh or frozen, thawed)
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp chia seeds
  • 1/2 cup granola (crushed into smaller pieces)
  • 2 tbsp chopped almonds
  • 1 tbsp coconut flakes
  • 1 tbsp honey
  • 1 tbsp coconut oil (melted)
  • Mango chunks and coconut flakes
  • Cocoa powder and mini chocolate chips
  • PB powder and chopped peanuts

    In large bowl, whisk together Greek yogurt, protein powder, honey, vanilla extract, and salt until smooth

    Divide yogurt mixture into 3 portions for layering

    For berry layer, mash berries slightly and mix with honey, lemon juice, and chia seeds

    Let berry mixture sit 10 minutes for chia to gel

    For granola layer, combine crushed granola, almonds, coconut flakes, honey, and melted coconut oil
